As it gets a bit warmer outdoors, enjoy this refreshing, vegan and gluten free, Raspberry Cacao Chia Seed Pudding!

Raspberry Cacao Chia Seed Pudding

Vegan and Gluten Free (Serves 2)

Chia Pudding

  • 1 cup almond milk
  • 2 tablespoons coconut cream
  • 1/4 cup chia seeds
  • 1 tablespoon maple syrup


  • 1 cup pecans
  • 5 medjool dates, pitted
  • 1/2 cup shredded coconut
  • 1 tablespoon coconut oil


  • 1/4 cup raspberries
  • 1 tablespoon cacao nibs or cacao powder
  • 1 tsp honey, drizzled


  1. Shake chia pudding ingredients well in a mason jar and let sit at least 30  minutes in the fridge or overnight
  2. Top with rawnola (food processed pecans, dates, coconut shreds and a bit of coconut oil until crumbly) or substitute your favorite granola
  3. Finish with raspberries, cacao and honey

Other Topping Variations

  • Banana Cream pie- top with rawnola, sliced banana, shredded coconut and agave
  • Dessert Chia Pudding- diced strawberry and chocolate chips, with a dollop of coconut whipped cream
  • Tropical- sliced mango, pineapple and shredded coconut
