We asked Marla Ben-Dor of Wellness with Marla for a healthy, on-the-go recipe to keep you nourished during the February Challenge – she suggested her Green Protein Energy Bites!

Green Protein Energy Bites

Base

  • 2 cups pecans, almonds or cashews
  • About 9 medjool dates (pitted)
  • 1 cup shredded coconut
  • 1/4 cup almond butter
  • 3 tablespoons melted coconut oil (or more if it is too dry)
  • 1 scoop vegan vanilla protein powder
  • 2 teaspoons of matcha green tea powder

Optional Add

  • Cacao nibs or cacao powder
  • Spirulina/chlorella green powder or matcha (1 tablespoon)
  • Goji berries or cranberries
  • Chocolate chips
  • Steel cut oats (1/4 cup)
  • Cinnamon or pumpkin spice
  • Flax powder (1 tablespoon)
  • Hemp seeds (1 tablespoon)

Directions

1.In a Cuisinart or high speed blender process nuts until very crumbly, add in pitted dates, nut butter, coconut oil and protein powder until the mixture comes together like a “dough”

2. Add remaining optional add-ins (dried fruit, shredded coconut, chocolate etc.

3. Remove from container and roll into balls

(Makes about 12-15 bite size balls. Store in the refrigerator for up to 2 weeks.)
