Gluten Free Indian Vegetable Curry

1/2 onion, diced

4 cloves garlic, chopped

1 tsp ginger, minced

1 tbsp coconut oil

2 cans lite coconut milk or real cow’s milk-cream

2tbsp tomato paste

2 tbsp curry powder

1 tsp garam masala

Salt and pepper to taste

2 medium red potatoes

2 carrots-cubed

1/2 head cauliflower

1 cup peas

Cilantro for garnish


  1. Sauté onions, garlic, ginger with coconut oil on medium heat for 2 minutes, mix in spices and stir
  2. Add chopped carrots and sweet potato, tomato paste and coconut milk
  3. Raise to a boil and then simmer on medium
  4. After 30 minutes add peas, salt and pepper to taste and top with cilantro

**For meat eaters- add cubed lamb or beef or chicken.
